Manuel Martinez began his career in the world of pastry in a pastry school in Leon, but their concerns do not stop there and then travels to Portugal where he is interested in the fascinating world of baking.
Currently works between Italy, specifically Florence and Spain, where he implements his knowledge in his small workshop of Yecla. Developing all kinds of handmade cakes, whether chocolate, assorted fruit, or nuts like almonds, but feel special predilection for the preparation of pastry, in all its varieties: sweet and savory. According to Manuel, is a very interesting material to develop, knowledge has gained in his travels to Italy, where he learned from the hand of his friend Simone Bellesi, who runs his coffee and pastries “Neri” Florence, the secrets of high pastry.
